i made this for lunch the other day and it was just right.


if you like that sort of thing, i guess. and i do.


trim heads and tails off okras. fry in 2 tablespoons of oil (don’t overcook or else they get mushy). on the side blend the onion and tomato. fry the onion/tomato puree in 3 tablespoons of oil for 10 to 15 minutes. add the ginger/garlic paste and fry for 2 minutes. add all the spices and cook for another 2 minutes. add the okras and salt and cook for 5 minutes. lastly, add cream, remove from heat and cover for 5 minutes. garnish with cilantro and serve with basmati rice or naan.

oh, by the by, i always substitute paprika for chili powder. it keeps the flavor without the heat. i don’t know what kind of insane person puts a tablespoon of chili in their food anyways.
