tindora fry

these are tindoras. they are yummy. you will probably never find them, but you should try.


1) cut each tindora into half lengthwise, then make another lengthwise cut in each half – you will end up with 4 long thin pieces. use about 30 tindoras.

2) in a pan, heat one teaspoon of peanut oil and toast 1 t. mustard seeds, 1 t. cumin, 2 cloves minced garlic and 6 curry leaves.

3) add the cut tindoras, sprinkle ½ t. turmeric, ½ t. salt and red pepper flakes to your taste. mix them once, cover and cook for about 5 minutes. remove the lid, then saute openly for another 5 minutes or until the veggie reaches the crunchy consistency you desire.

serve hot with chapatis or with rice and dal.


marc made me this dish. the india food store only gets produce once a week, so i have to wait till friday to have more. i can taste them in my mind (that is what i do with my mind lately).
