the best thing i’ve eaten all month

and it looks disgusting.

coconut black beans:

2 cans of black beans

1 can of coconut milk

2 t cumin seeds

3 large cloves of garlic, crushed

2-3 whole dried chilies (i used pasilla)

1/2 c of chopped white onion

1 t salt

1 T brown sugar

1 mango, sliced

1 avocado, sliced

1) in medium sauce pan add a little bit of oil and garlic and onions, simmer on med/low a few minutes

2) add the chili peppers and the cumin, fry on med heat for 1 minute

3) poor in the coconut milk

4) drain/rinse beans and add to the mix, add salt and sugar

5) simmer for 15 minutes

6) remove chili peppers

serve it in bowls with the avocado and mango on top.  try it, you will like it.
